The restaurants and eating spaces at The Jefferson Hotel were renovated as part of the entire hotel restoration.  A new build-out of the relocated restaurant and bar/lounge areas accompanied the full renovation of the full-service kitchen.  High-end features incorporated throughout include custom granite, plaster, painting, millwork and specialty lighting.  The pumpkin-colored bar, made of custom molded glass and illuminated with fiber optics (the first installation of this system worldwide), provides a glowing welcome to the lounge and restaurant areas.  A highlight of the restoration was the reintroduction of a magnificent 1923 skylight in the lobby. Covered and “lost” for decades, it now allows natural light to stream into the hotel at the entryway to Plume, the hotel's fine dining restaurant
